With better quality than fast food, and much quicker (and cheaper) service than a sit-down restaurant, Chipotle and Panera Bread have had great success with the “fast-casual” concept. The approach has spread to “better burgers,” and lately, to pizza too, with the launch of 800 Degrees, PizzaRev, MOD Pizza, and other brands that promise freshly made, ultra-fast pizzas at a reasonable price. Perhaps the category leader is Blaze Pizza, which launched in California in 2012 with two locations, and has plans to expand into New Jersey, New York, and Connecticut, among other states. Like other fast-casual pizza chains, Blaze features an assembly line where customers choose among dozens of toppings, as well as 800-degree ovens that cook pizzas in just two minutes.
